Ingredients:
- 1 head garlic
- 2 lb purple potatoes, well washed, peeled and quartered
- 1 tsp seas salt
- ground black pepper
- 4 tbsp butter or olive oil
- ¾ c milk
Instructions:
Preheat oven to 425, place a rack in middle of oven. Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a baking sheet and bake until tender and fragrant, about 35 min. Remove from the oven, let cool and peel.
Put potatoes in a large pot and cover with cold water, add salt and bring to a boil. Cook until fork tender, drain.
Return pot to stove and remaining ingredients and mash until smooth.
